The health benefits of broccoli are beginning to reveal that this cruciferous vegetable may even be more potent than its advocates had ever realized. It contains more Vitamin C than many citrus fruits. It has more calcium than an entire glass of milk. And it’s even richer source of fiber than that of a whole wheat bread. But the real potent nutritional value of broccoli lies in substances called isothiocyanates. Isothiocyanates is a very potent anti-carcinogen that helps us fight against cancer. Where in it is better taken as raw rather than cooking it. Cooking can reduce 60 to 90 percent of ITCs, (isothiocyanates),”according to a scientist who led a study of broccoli. Now that we know more about the nutritional value of broccoli, the problem is that many of us don’t like the way it tastes. For others, it’s hard to chew. And to some the bitter taste is a turn-off. Others can only eat it in in soups or after it’s been sautéed. But there are many recipes out there that doesn’t need too much cooking of the broccoli so that you still get its high nutrional value as well as isothiocyannates which is known to fight cancer.
